Parkin cake- Bonfire Night Cake

A gorgeously sticky and wholesome cake made with oats, treacle, golden syrup and lots of ground ginger. You can easily make this recipe vegan by omitting the egg and replacing the fats with vegan versions. A great addition is adding chopped crystallised ginger or even candied peel (100g). If feeling wild, why not replace the the ground ginger with fresh ginger (grated 2 inch piece)?

Parkin Cake

  • 250 g white flour
  • 200g dark brown sugar
  • 180g golden syrup
  • 160ml milk
  • 130g butter (or non-dairy alternative)
  • 120g treacle
  • 100g porridge oats
  • 1 1/2 tbsp ground ginger
  • 2 1/2 tsp baking powder
  • 2 tsp ground mixed spices (or chai spices)
  • a generous pinch of salt
  • 1 egg (optional for added richness)

 

1 Grease up a 9 inch square cake pan and turn your oven to 180C/160C fan-assisted.

2 In a large mixing bowl, blend your dry ingredients: flour, oatmeal, ground spices, baking powder and salt; set aside.

3 In a medium sized saucepan on a low-medium heat add the butter, golden syrup, treacle and stir until melted and cohesive. Take off the heat and add the egg, mixing it into the gooey concoction.

4 Add the gooeyness to the dry ingredients in the mixing bowl, adding the milk as you mix until no lumps remain.

5 Pour into the cake tin and spread it out, baking in the pre-heated oven for 35-45 minutes, until you can tap the centre and there is hardly any give. It should be a lovely rich dark brown colour.

6 Serve on its own or with a drizzle of single cream. Why not? It’s nearly Christmas.
