Bonus Mum’s Malt Loaf

My Mum-in-law’s Malt Loaf is that perfect combination between a loaf and a cake, ideal for “tea” time and also for that sneaky fridge snack. The great thing about this recipe is the 1 cup for each ingredient ratio. Whatever the size of this cup, it will work. If you want to spoil the party and get your scales out, you’ll find the measurements below.

Bonus Mum’s Malt Loaf

  • 40g (1 cup) all-bran or bran cereal
  • 200g (1 cup) soft brown sugar
  • 165g (1 cup) mixed dried fruit (sultans raisins and candied peel)
  • 240g (1 cup) milk (use non-dairy milk for vegan version)
  • 140g (1 cup) self-raising flour

 

1 Mix all ingredients except for the flour together in a bowl, waiting an hour for the dry ingredients to soak in the milk.

2 Add the flour and mix well before during in a loaf tin.

3 Bake for 1 hour 15 minutes at 180C/160C fan-assisted.

4 Test if cooked with a skewer, cooling off on a wire rack.

5 Serve with butter, marmalade or slices of mild cheese.
